Just as with a real-world restaurant, the greater the buzz about your place, the more people want to come there, and the more customers you have and the more money you make.
So how do you make customers happy? At the most basic level, it is easy. If a customer is served promptly once they sit down, they are happy. This increases your Buzz Rating.
On the other hand, if a customer sits down and isn't served promptly, they become unhappy and leave. They don't mind having to walk a bit to get to their table, which leads to a great tip in Cafe World Domination, but once they get there, they want to eat. Or if a customer comes in and can't find a seat they're not going to stick around for long. They'll get unhappy and leave.
